Asparagus and Artichokes in White Wine
- 8 Artichokes
- 1/2 Lemon
- 500 gr Asparagus
- 3 Spoons Extra-virgin olive oil
- 1 shallot
- 50 gr Smoked Bacon
- 1 Glass of Dry White Wine
- 3 Sodi Ripe San Marzano Tomatoes
- 1 bunch of basil
Squeeze the lemon.
Deprive the artichokes of the stems, the harder external leaves, the tips and any internal fluff, equalize the bottoms and place them, from time to time, in a basin of water acidulated with the lemon juice so that they do not blacken.
Drain and steam them for about 15 minutes; let them cool and cut each bottom into 4 parts.
In the meantime, remove the hardest final parts of the asparagus, peel them with a potato peeler, possibly with a bow, wash them thoroughly; cut them into 3-4 cm long pieces and steam them for about 8 minutes.
Clean the shallot and chop it; cut the bacon into strips; blanch the tomatoes in boiling water, peel them, remove the seeds, the vegetation water and cut them into cubes; wash the basil and chop it.
Put the oil in a pan and let the shallot wither without letting it brown; add the bacon cut into strips.
After 5 minutes of cooking, pour in the wine and reduce the liquid by half.
Add the artichokes and asparagus and heat them; finally add the tomatoes and basil.
Season with salt and pepper and cook for about 5 minutes.
Serve them hot.
