- 1-2 ripe avocados
- 2 shallots
- 1 tomato
- chili pepper
- 400 g of pasta (if you are celiac, obviously use gluten-free pasta)
- 2-3 tablespoons of extra virgin olive oil for cooking
- 1 drizzle of raw extra virgin olive oil
- some cherry tomatoes to decorate
Put a pot of salted water on the fire for the pasta.
Clean the shallots and wash the avocados.
Cut the shallots in half lengthwise, make them into transversal slices and fry them in oil in a non-stick pan or better still a pasta maker. Add the tomato and cook the sauce for a few minutes, stirring often. Season with salt and add pepper and chilli to your liking.
Throw in the pasta as soon as the water is boiling.
Cut the avocados in half lengthwise without affecting the stone and slowly rotate the halves. If the avocado is ripe, they will come apart. Remove the core.
Using a teaspoon, gently remove the avocado pulp from the peel, so that the first remains as whole as possible. Cut the pulp in half lengthwise and then make it into transversal slices of about 0.5-1 cm thick.
Drain the pasta al dente and add it to the sauce in the pan. Add the raw avocado and sauté everything for a minute, gently mixing the pasta without crushing the avocado.
Serve with a drizzle of raw oil and decorate with cherry tomatoes. Enjoy your meal!
